Every Sunday thousands of paellas are prepared in our country, since this is a traditional dish to eat with the family. There are so many good varieties of rice in paella that it is good to vary so as not to be limited to the classic Valencian paella, the tourist mixed paella or the Alicante one, or also to a banda rice, senyoret rice or rice with rabbit. That is why today we are going to enjoy a good vegetable paella that, as you will see, is very simple to prepare and is delicious.
Although we are not going to use any protein of animal origin in our paella rice recipe, the flavor of this dish is delicious and, at least in my house, it is one of our favorite rice dishes. With some fresh artichokes, a bit of cauliflower and other remains that we have in the fridge, we can prepare a wonderful recipe for use.
Vegetable paella for 6 people
Ingredients:
- 2 cups (400 grams) of bomba rice
- 1 large red bell pepper
- 1 large green bell pepper
- 2 ripe tomatoes
- 1 large onion
- 3 garlic cloves
- 1 cup (150 grams) green beans
- 1 cup (150 grams) of carob beans
- 1 teaspoon sweet paprika
- Olive oil
- Salt
- Vegetable broth (twice the amount of broth than rice)
Elaboration:
- First, cut the vegetables into small pieces. Chop the onion and garlic, and cut the peppers and tomatoes into small cubes.
- Add olive oil to the paella and heat over medium-high heat. Once hot, add the onion and garlic and fry until golden.
- Add the peppers and cook for a few minutes until soft. Then add the tomatoes and cook for another 2-3 minutes.
- Add the green beans and garrofones and stir well.
- Add the rice to the paella and stir so that the rice is completely covered with the ingredients.
- Add the teaspoon of sweet paprika and mix well.
- Add the hot vegetable broth (double the amount of broth than rice) and season with salt to taste.
- Cook the paella over high heat for 10 minutes, then lower the heat to medium and continue cooking for another 10-15 minutes, until the rice is al dente and the broth is fully absorbed.
- Turn off the heat, cover the paella with a clean cloth and let it rest for 5-10 minutes before serving.
With what to accompany the vegetable paella
To accompany this delicious vegetable paella, we recommend starting with some simple but tasty appetizers, such as artichoke chips or homemade spinach and cheese croquettes. You can also serve a fresh lettuce, tomato and cucumber salad as a starter, dressed with a lemon vinaigrette and fresh herbs.
For the main course, nothing beats vegetable paella, but if you want to include a protein, you can add some peeled prawns or steamed mussels to complete the dish. Accompany the paella with a good glass of white wine, such as an Albariño or a Verdejo.
And to finish with a sweet touch, an excellent option is to prepare individual strawberry and lemon tarts, with a crunchy biscuit base and a soft and creamy filling. Serve these delicious tarts with a scoop of vanilla ice cream or a glass of fresh cava for the perfect end to your dinner. Enjoy!
